A welcome glass of bubbles, NV Cremant de Bourgogne Brut Grande Cuvee, Veuve Ambal, Burgundy, France   

Horseradish and chive focaccia, whipped tallow

Consommé de boeuf

Beef tartare, pickled shallot, crispy capers, parsley, crème de jaune d’oeuf

Fillet of beef, celeriac and potato dauphinoise, butternut squash purée, roast onion, braised chicory, red wine jus

Quince sorbet

Apple tarte tatin, vanilla ice cream
